Enjoy Swiss gastronomy in Lausanne

Next September, the Brasserie du Royal at the Hotel Royal Savoy will feature the renowned chef's creations. Although Haeberlin's arrival in the city is to be celebrated, Lausanne is already a thriving destination for food-lovers.

The only 3-star French female chef took up residence in the kitchens of the famous Hotel de Lausanne in 2009. Offering a plunging view of Lake Geneva and the Alps, the 2-Michelin-star restaurant is a satellite of the Maison Pic restaurant in Valence.

Last in line of the Pic family name, Anne-Sophie carries on in the footsteps of her father Jacques and grandfather André. She applies her skills and know-how to infusions, combining flavours and extremely detailed plate presentation. The next step is perhaps receiving a third star from the bible of gastronomy. Menus start at 210 Swiss francs (RM928.06); prices vary for business lunches.

Benoît Violier at the Hôtel de Ville restaurant

Loved by food critics, Chef Benoît Violier's restaurant is situated on the north bank of Lake Geneva in the surrounding neighbourhood of Lausanne. The address boasts 3 stars and is known for the perfection of its dishes as well as the wine list.

This gourmet spot honours typically French produce, in particular seafood. The audacious chef works with flavours and ingredients like turbot fish from Les Sables-d'Olonne, Stone King crab from Cap Fréhel and bouchot mussels from the bay of Mont-Saint-Michel. The first menu starts at 295 Swiss francs.

La Table d'Edgar at the Lausanne Palace

Mediterranean flair in Vaudois territory... Chef Edgar Bovier presides over an indispensable establishment in the elegant Lausanne Palace & Spa at the heart of the Olympic city. The cook brilliantly presents produce from the Côte d'Azur, in particular dishes from Nice, thanks to his passion for olive oil. A specialised boutique can be found in the Palace so food-lovers can bring home some of the chef's favourite ingredients.

Diners in his restaurant enjoy lobster from Brittany served with zucchini from Nice, fresh almonds and basil, or zucchini flower soufflé and crispy crayfish in Menton lemon sauce as appetisers. The main dish consists of various creations including royal sea bass grilled in cappelletti tomatoes with wild fennel and pine nuts. Return to Switzerland for dessert as Bovier uses local products and cheeses to end the meal. The first menu starts at 75 Swiss francs.

Carco Crisci at Le Cerf restaurant

Twenty-five minutes outside of the city, Chef Crisci has been serving a heartfelt cuisine for more than 30 years. The chef dares to combine curious flavours: infrared-cooked duck filet flavoured with the herb benoîte urbaine and the cooked fruit dish raisinée, mullet with poppy, marble foie gras terrine in a coffee and cocoa duo. Dishes are served in a chic and intimate atmosphere. The first menu starts at 288 Swiss Francs.

Le restaurant Les Trois Couronnes

Lausanne dining is not confined to the city's borders but can also be found in the town of Vevey — a 30-minute drive from the city. Here diners can discover the skill of young French chef Lionel Rodriguez, who began his career working under Ducasse.

Inspired by the sun and warmth of Toulouse, where he grew up, the young chef presents exquisite dishes: Dublin Bay prawns with anise, zucchini cannelloni, roasted royal pigeon in thyme, vine peach and lavender soufflé... In sync with the today's diners, the menu includes lactose-free, gluten-free and vegetarian dishes and menus. Prices start at 95 Swiss francs for the "wellness" menu.
