World’s best chef to open a new restaurant in Copenhagen
Rene Redzepi, the chef at Noma – which has won the Restaurant magazine award for Best Restaurant in the world several times – has announced that he will be opening a bistro, not far away from his famous restaurant in the Danish capital.
Rene Redzepi is the top chef of 2015. This summer he announced he would be spending a ten-week stint with his team in Sydney. Food lovers held their breath until bookings opened, hoping to nab a place at this pop-up restaurant...which was full in less than two minutes.
Redzepi also left critics distraught when he announced that Noma is to close at the end of 2016. The restaurant will be relocated to a farm in order to put even greater emphasis on local products. This plan fits well with the culinary school to be headed by Rene Redzepi, who will teach students how to gather plants and other wild ingredients.
And now the two-Michelin-starred chef is adding to his plans with the opening of another Copenhagen restaurant, to be called 108 in reference to the number of the street in which it's located. Redzepi teamed up with another chef, Kristian Baumann, to get the project off the ground, which required a year's work.
The team at 108 will respect the celebrated chef's Nordic approach, but in a more relaxed setting, similar to a French bistro. Nature will be the focus of the cuisine on offer. On Facebook, Rene Redzepi unveiled one of his dishes described as "fishcake made from pollock, served with a mussel and parsley sauce, toasted seaweed and salted plums." The new restaurant is expected to be opened in late spring 2016.

But the most impatient customers will not have to wait that long to sample 108's cuisine, as while Rene Redzepi and his team are leaving Noma behind to work in Sydney in early January, the future 108 team will temporarily take over the kitchen. Noma will thus be transformed into a pop-up restaurant, from January 20 to April 16, 2016, for dinner only (from Wednesday to Saturday). Bookings for "108 at Noma" are open at the website 108.dk.
