The best thing to beat the heat is a cooling, refreshing cucumber and onion raita.This light and refreshing dish can serve as an appetiser, or can go perfectly with any main.
Serving: 4 people
Difficulty: Easy
Preparation Time: 15 minutes
Cooking Time: None
Ingredients:
1 cucumber – thinly sliced
3 onions – thinly sliced
2 red chillies – thinly sliced
a bunch of coriander leaves – finely chopped
Juice of 2 limes
Salt to taste
500g natural yogurt
Method:
1. Mix all the ingredients together and keep the raita in the fridge until it is to be served.
* Note: Balance the flavour between the salt and lime juice.
