Looking for an easy way to prepare a traditional yet delectable fish dish? The hinava (traditional fish salad) is a must-try dish whenever you visit Sabah. This is a very popular, unique dish originating from the Kadazandusun tribes. It's made from fresh tuna marinated in lime juice, shallots, ginger and sliced chillies.

Ingredients:
200g fresh tuna
67g bittergourd
17g ginger
34g shallots
3 bird's eye chilli or cili padi
42ml lime juice
Salt, to taste
Method:
1. Clean and finely slice the tuna fillet then marinate with lime juice and salt.
2. Slice the bittergourd, ginger, shallots and bird's eye chillies into thin strips.
3. In a bowl, mix all the ingredients together and let marinate for around 10 minutes.
4. Toss well then set it on a plate, garnish and serve.
Chefs tip: You can prepare this dish one day earlier before serving. Just keep it covered in the fridge until it's time to serve. This dish is best served cold.
