Homemade Traditional Kaya

Serve up delicious, creamy kaya fresh from your stove.Serve up delicious, creamy kaya fresh from your stove.Kaya is a firm favourite among Malaysians, and this simple recipe will fill your home with the enticing aroma of pandan, and fill your bellies with the delicious flavours of home made kaya.

Serving: About 500ml of thick Kaya
Difficulty: Easy
Preparation time: 10 minutes
Cooking Time: 50 minutes

Ingredients:
250ml thick santan
250g sugar
4 eggs (beat till smooth)
4 pandan leaves

To make the caramel:
Place 2 tbsp sugar in a non-stick pan and use medium heat to cook the sugar till it dissolves and turns golden brown

Method:

1. Stir santan and sugar in a pot using low heat till sugar dissolves. 

2. Add in eggs, stir till well mixed.

3. Strain and place mixture in a double-boiler with pandan leaves.  You can also place the mixture into a pot over a saucepan filled with water.

4. Use medium heat and stir the mixture  continuously.  Kaya mixture should thicken after about 30 minutes.

5. Add in sugar caramel in the last 10 minutes of cooking, mix well until kaya thickens.
