Vegetables and kids are not necessarily the best of friends, but mix in some egg and ham, and this tasty snack will surely gain the approval of those fussy little eaters.
This recipe requires no stovetop cooking and there's plenty of easy tasks for those little hands to get busy.

Ingredients:
3 medium size eggs
200 gm german ham, divided into 4 strips (to line the muffin holes) and the rest roughly chopped
4 cherry tomatoes, roughly chopped
2 tbsp grated parmesan or tasty cheese
½ cup of chopped broccoli florets
Salt and pepper to taste
Method:
1. Lightly brush the insides of a muffin pan with some olive oil or softened butter.
2. Crack the eggs into a bowl and beat lightly.
3. Line each muffin hole with a strip of ham and pour in some beaten egg. Sprinkle some grated cheese, chopped tomatoes, chopped ham and chopped broccoli. Season with some salt and freshly cracked pepper.
4. Bake for 15 minutes on 180celcius until the muffin is puffed up and golden brown. Serve hot.
