Marinated Cockles with Coriander

Ingredients:
300g fresh cockles
3 litres water, for blanching
1 tsp salt, for soaking the cockles
Marinade:
½ litre peanut or sunflower oil
1 clove garlic, chopped
4 tbsp fish sauce
1 coriander root
1 sprig coriander leaves, chopped
4 tbsp balsamic vinegar
10g sugar

Method:

1. To prepare the marinade, heat up the oil in a wok until boiling point. Lower the heat to medium, slide in the chopped garlic, and stir with a steel spatula until the garlic turns light brown.
2. Turn off the heat and continue stirring. The garlic will turn a golden colour. Remove the wok from the stove. Mix the rest of the ingredients for the marinade in a large mixing bowl. Finally, add the fried garlic into the bowl and set aside.
3. Wash and soak the cockles in salted water for half an hour before use. This is to make sure the cockles are thoroughly clean of mud.
4. Boil a pot of hot water, and lightly blanch the cockles for about 5-10 seconds. Remove and drip dry. Stir the cockles into the marinade and mix well. Refrigerate for 30 minutes and serve cold.
