Nothing beats a moist, home-made banana cake that's bursting with ripe, sweet mashed bananas.

Ingredients:
250g plain flour
1.5 tsp baking powder + 1 tsp soda bicarb
250g butter
180g castor sugar
1/3 tsp salt
1/2 tsp vanilla paste or 1 tsp vanilla essence
5 eggs
350g mashed bananas
2 tbsp milk
Method:
1. Sieve plain flour, soda bicarb and baking powder together.
2. Cream butter, sugar, vanilla and salt till pale and fluffy.
3. Beat in eggs one at time, beat well after each addition.
4. Add in the flour mixture, mashed bananas and milk, mix at low speed till well blended.
5. Pour batter into a lined tin (9”square/round) & bake at 180C for 45-50 minutes.
6. Cool cake in tin for 5 minutes before turning it out.
