Tritip, which is beef that is right beneath the sirloin and it is one of the easiest meats to cook along with its fabulous flavour, thanks to the marbling of fat throughout the cut.

Ingredients:
300g beef Tritip - sliced across the grain thinly
Marinade:
Variation 1:
1 teaspoon turmeric powder
Salt to taste
Variation 2:
1 level tablespoon meat curry powder
1 tablespoon coconut cream
Salt to taste
Variation 3:
1 tablespoon oyster sauce
1 tablespoon crushed black pepper
Salt to taste
2 big red onions – cut into rings
6 bird's eye chillies
1 to 2 tablespoons cooking oil
Method:
1. Marinate the beef with any one of the marinades above for at least 30 minutes.
2. Heat the cooking oil in a pan and when the oil is hot, add the beef and stir fry over high heat. Cook the beef over a high flame until the meat is slightly charred.
3. Add the onion rings and chillies and continue to stir fry until the onions are soft. Dish up and serve.
